The Siberian sturgeon (acidpenser baerii) has seen a major comeback in recent years, thanks in great part to aquaculture - the practice of farming sturgeon in controlled artisan waters worldwide. Native to Russia, this particular Siberian Osetra is farmed in Uruguay's Rio Negro and harvested using traditional methods. A classic Osetra, Royal Siberian has large dark pearls with that characteristic nutty flavor. Year round harvesting and a controlled steady supply keeps prices low while attention to detail keeps quality high. A must!
